In Belgium, beet sugar is part of a long tradition. And for our family, this story holds a very special meaning.
For seven generations, our family has been linked to the world of sugar.
In Mexico, the beet (betabel) is well known. But few people know there is another variety: the white beet, also called sugar beet.
This plant gives us the sugar that makes up an essential part of the Liège waffle's personality.
Our authentic Belgian pearl sugar, made from beet sugar, withstands heat and caramelizes as it bakes. These little crystals create the distinctive flavor and the delicious caramelized crust that make the Liège waffle unique.


For us, making a Liège waffle isn't simply about following a Belgian recipe.
It's about carrying on a story.
A story of family, tradition and ingredients that have been part of our lives for generations.
That's why behind every waffle we make at Wafflessence de Paul, there is a small bond between Belgium and Mexico.
Today, this family tradition has found a new home in San Miguel de Allende.
At our restaurant, we share the flavors of Belgium through our waffles and specialties.
And for those who want to take a little of this experience home, we also offer our authentic Belgian pearl sugar in different sizes, available at the restaurant and on Mercado Libre.
Because some flavors deserve to travel too.
